Festive rum cake is a dessert cake delicacy which contains a small portion of rum, wine, and fruit mix. In most of the Caribbean, rum cake is a traditional holiday season dessert snack. Dried fruit mix and/or cherries are soaked in rum and wine for months and then added to dough mix, prepared with brown sugar which has been caramelized.
In Trinidad and Tobago, fruits are preserved in cherry brandy to be used in the making of the black cake, an alternate name for rum cake. Black cake is traditionally associated with Christmas in Trinidad and Tobago.
In Puerto Rico, rum cake is called Bizcocho de Ron, and is a sponge cake, so as to absorb the rum. Raisins and sultanas may be soaked in rum for one day or one night. Bizcochos de Ron are given as gifts during the holiday season.
Many island travelers and/or vacationers go out of their way to pick up the Caribbean prepared rum cake during the Thanksgiving and Christmas seasons from the Islsnac Shop. Islsnac rum cake is made with cherries and raisins soaked in rum and wine, as well as brown sugar and a bittersweet caramel called "Browning". Rum Cake is also called fruit cake and is usually enjoyed with Sorrel Drink.
