JAMAICAN FRIED DUMPLINGS RECIPES

Ingredient:

500g J.F. Mills Johnny cake pack mix

1/2 cup milk or water

3 cups vegetable oil

  1. Combine 1/2 pack of JF Mills Johnny cake mix with 1/2 cup milk or water using hands to knead until smooth. You have an option between water or milk. Your preference. Also, if you use the entire 1 pack to make your fried dumplings, then 1 cup of water or milk will be required. 

  2. Leave the fried dumpling dough in a bowl covered for approximately 15 minutes. This allows for the dough to rise which results in a moist fluffed texture after cooking. 

  3. The dough for the fried dumplings is then portioned into equal pieces, to form a ball then slightly flatten at the top. Pinch pieces of dough at a time and place it in the palm of your hand. With the dough sandwiching your palms, make brisk circular motion until the surface of the dough is smooth. Use a thumb and gently press and create a flatten surface. 

  4. Pre-heat vegetable oil in a spacious frying pan on medium heat for approximately 2 minutes. A frying pan with enough space allows the fried dumplings to cook well and not crumble due to excessive dough friction. Also, overheating the vegetable oil will cause excessive unsafe oil splash and dumplings to burn. On the other hand, underheating oil will cause the dumpling dough pieces not to fry well in the dumpling core.  

  5. Once the vegetable oil is fully hot, lower heat. Slowly and carefully place dumpling dough pieces into the frying pan with oil, allowing the submerged pieces to almost or completely covered with vegetable oil. The fried dough pieces will ideally create small bubbles on the outer surface of the frying dough upon dough insertion. 

  6. Cover frying pan. Turn frying dumplings over at 30 seconds to 1-minute intervals with spatula and alternate each side until golden brown. The frying pan is covered to allow fried dumplings to rise well whiling cooking.

  7. Fry dumpling dough pieces into a golden brown Jamaican fried dumplings. 

  8. Serve fried dumplings warm.

2 cups all-purpose flour

1/2 cup cornmeal

1 tbsp. baking powder

1/4 tsp salt

3 cups of vegetable oil for frying

1 cup water
