Ingredients:

Red-skinned grated sweet potatoes (Boniato Jamaican yam), nutmeg, ground all-spice (mixed spice), cinnamon, pure vanilla extract, almond extract,  Wray and Nephew rum, sweet red wine, coconut milk, brown sugar, yellow fine cornmeal flour, a small portion of raisins, and a slither of low-fat butter. *The vegan sweet potato pone does not require butter.

 

Instruction:

  1. Preheat oven to 350 F degrees
  2. Boniato red-skinned sweet potatoes are peeled and grated or blended well with liquid spices. 
  3. Combine dry ingredients with potato mixture and blend well.
  4. The pudding is baked while tightly covered for 60 minutes at 350 degrees Fahrenheit in an 8 inch or 10-inch round baking pan. The baked potato dessert is then removed from the oven and glazed with a caramelized topping.
  5. Bake for an additional 30 minutes uncovered. 
  6. Cool and refrigerate.
