The core of the dish is dried Atlantic saltfish. You'll need to soak the fish in water for two or three days before cooking. Once it's ready, finely shred the fish, before coating it in flour, adding garlic, onion, and spices as you please.

Pigeon Peas and Rice

This famous Bahamian dish is just as delicious to eat as it is simple to prepare. One of the most beloved dishes from the small island nation, it's comforting and flavorsome, working well as either a main course or side dish.


Fry bacon in a pan, then add rice, corn, tomatoes, and the pigeon peas themselves to the pot. These delicious peas can be a little hard to find, but their flavor and texture make the search worthwhile.

Bread Pudding

Caribbean food isn't all hot and spicy. The cuisine also features plenty of hearty desserts, which hit the spot at any time, whether you're sitting out on the deck enjoying the sun, or cuddling up on the couch during a stormy winter night.


Bread pudding is a classic Caribbean dessert. Not only is it easy to make and delicious to eat, but it's also a great way to use up not-so-fresh ingredients, like slightly stale bread or brown bananas.

Mix cubes of bread with milk, eggs, and seasoning, before baking the mixture in a pan for about 40 minutes. Be sure to add rum-soaked raisins for a dash of tropical flavor.
